Finnish Cinnamon Pastries (Korvapuusti)
Finnish 'slapped ear' pastries, known as korvapuusti, offer a delightful treat filled with sweet brown sugar and fragrant cinnamon.

Instructions

Combine milk, 4 tablespoons melted butter, yeast, and sugar in a large bowl; let sit for 10 minutes until bubbly.

Stir in salt, cardamom, and 1 beaten egg.

Gradually add 4-5 cups flour, then knead dough for 7 minutes by machine or until smooth by hand.

Place dough in a greased bowl, cover, and let rise for 1 hour until doubled.

Punch down dough and divide into two equal halves.

Roll each half into an 8x14-inch rectangle.

Brush each rectangle with melted butter, then sprinkle with brown sugar and cinnamon.

Tightly roll each half lengthwise into a "snake".

Cut each roll diagonally every 2 inches, yielding 7 triangular rolls per half (14 total).

Place rolls point-up on greased cookie sheets, then press each tip to form ear shapes.

Cover and let rise for another hour until doubled.

Preheat oven to 400°F.

Brush rolls with beaten egg, sprinkle with pearl sugar, and bake for 10-15 minutes until golden brown.
