Filling and Hearty Corn Chowder

Melt butter in a large saucepan over medium heat.

Sauté onions in butter until soft and translucent.

Add 4 cups of corn and chicken broth; cook for 15 minutes until corn is tender.

Puree cooked corn, onions, and liquid in a food processor until smooth.

Return puree to the pot, then add remaining 2 cups of corn, evaporated milk, bell pepper, and thyme.

Simmer for 5 to 10 minutes, stirring until thickened and peppers are soft.

Season with salt and pepper; garnish with chives to serve.
