Filipino Kare Kare (Oxtails With Tripe) Recipe

Instructions

  1. Start boiling 3 quarts of water for blanching tripe.

  2. Heat 3 tablespoons peanut oil in a large skillet; brown oxtails in batches, then transfer them to a 6-quart Dutch oven.

  3. Blanch tripe in boiling water for a few minutes, drain, cool, cut into 1/2-inch by 3-inch strips, and add to the Dutch oven.

  4. Sauté onion and garlic in the same skillet with remaining peanut oil, then add to the Dutch oven along with tomato, beef stock, water, salt, and annatto oil.

  5. Bring the pot to a boil, reduce heat, cover, and simmer for 1 1/2 hours.

  6. Continue simmering partially covered for another 1 1/2 hours, stirring occasionally.

  7. Combine peanut butter and hot water in a small bowl while the main dish simmers.

  8. During the last hour of cooking, add the peanut butter mixture and Tabasco; adjust seasoning if needed and cook longer if oxtails are not tender.

  9. In the final 15 minutes, cut bok choy into 2-inch pieces.

  10. Add bok choy to the pot and simmer for 10-15 minutes until soft.
