Instructions
-
Start boiling 3 quarts of water for blanching tripe.
-
Heat 3 tablespoons peanut oil in a large skillet; brown oxtails in batches, then transfer them to a 6-quart Dutch oven.
-
Blanch tripe in boiling water for a few minutes, drain, cool, cut into 1/2-inch by 3-inch strips, and add to the Dutch oven.
-
Sauté onion and garlic in the same skillet with remaining peanut oil, then add to the Dutch oven along with tomato, beef stock, water, salt, and annatto oil.
-
Bring the pot to a boil, reduce heat, cover, and simmer for 1 1/2 hours.
-
Continue simmering partially covered for another 1 1/2 hours, stirring occasionally.
-
Combine peanut butter and hot water in a small bowl while the main dish simmers.
-
During the last hour of cooking, add the peanut butter mixture and Tabasco; adjust seasoning if needed and cook longer if oxtails are not tender.
-
In the final 15 minutes, cut bok choy into 2-inch pieces.
-
Add bok choy to the pot and simmer for 10-15 minutes until soft.
