Figgy Pudding

Instructions

  1. Preheat the oven to 325 F.

  2. Cream 1/2 cup unsalted butter in a stand mixer until fluffy.

  3. Beat in 2 eggs and 1 cup molasses.

  4. Add 2 cups chopped figs, 1/2 teaspoon lemon peel, 1 cup buttermilk, and 1/2 cup chopped walnuts; blend for 1 minute.

  5. Mix in 2 1/2 cups flour, 1/2 teaspoon baking soda, 2 teaspoons baking powder, 1 teaspoon salt, 1/2 teaspoon cinnamon, and 1/4 teaspoon nutmeg until just combined.

  6. Pour the batter into a greased and floured 8x4-inch soufflé dish.

  7. Bake for 1 hour, or until a toothpick inserted into the center comes out clean.

  8. Serve the pudding with whipped cream.
