Instructions

  1. Start boiling a large pot of salted water for the pasta.

  2. Cook bacon in a large pan until crisp, then remove, drain, and crumble. Drain most of the fat from the pan, then cook garlic in the remaining fat for 30 seconds.

  3. Scrape the garlic and bacon fat into a small bowl with the crumbled bacon.

  4. Add eggs, mayonnaise, milk, salt, and pepper to the bacon mixture, then whisk until smooth.

  5. Cook pasta in the boiling water until al dente, then drain, reserving 1/3 cup cooking water; return the pasta to its pot.

  6. Off the heat, add the mayonnaise mixture to the pasta and toss, using reserved pasta water as needed to achieve a smooth sauce.

  7. Add Parmesan cheese, toss again, and serve immediately.
