Instructions

  1. Ensure jars are clean and sterilized.

  2. Scrub beets, trim tops and roots, then cut into 1/2-inch dice or 1/4-inch slices.

  3. Dissolve salt in water to create a brine.

  4. Pack beets, thyme, garlic, and peppercorns into jars, leaving 1 to 1 1/2 inches of headspace.

  5. Cover contents completely with brine, add a fermentation weight, and secure the lid, allowing for gas release.

  6. Place the jar on a baking sheet in a cool, dark place to ferment; the brine will cloud and then clear.

  7. Refrigerate fermented beets for 1 to 2 months, keeping them submerged in the brine.
