Fennel Avocado Salad

Instructions

  1. Whisk oil, lemon juice, and salt in a large bowl.

  2. Halve and pit the avocado, then slice or cube it directly into the dressing.

  3. Gently toss avocado with dressing.

  4. Trim and thinly slice the fennel bulb, reserving fronds for garnish if desired.

  5. Add sliced fennel to the bowl.

  6. Thinly slice red onion, rinse in cold water, and pat dry.

  7. Add onion to the bowl with other ingredients.

  8. Toss all vegetables to coat evenly; season with pepper and additional salt to taste.

  9. Garnish with reserved fennel fronds if using.

  10. Serve immediately or cover tightly and chill to prevent avocado browning.
