Instructions

  1. Start boiling a large pot of well-salted water. Cook pasta until barely tender, reserving 1 cup of cooking liquid before draining.

  2. While pasta cooks, thinly slice the fennel bulb and garlic. Prepare the fresh chile if using, crush the fennel seeds, and mince the parsley.

  3. Heat oil in a large pan over medium-high heat. Sauté garlic until golden, then add chile flakes or fresh chile.

  4. Stir in the sliced fennel, crushed fennel seeds, and 1/2 teaspoon salt; cook for 2 minutes until fennel softens.

  5. Add wine or broth, cover, reduce heat to medium-low, and cook for 5 minutes until fennel is tender.

  6. Stir in minced parsley, then add the drained pasta and reserved cooking liquid, tossing to combine.

  7. Increase heat and cook for 2 to 3 minutes until most liquid evaporates and flavors meld.

  8. Serve topped with your preferred hard cheese.
