Instructions
-
Start boiling a large pot of well-salted water. Cook pasta until barely tender, reserving 1 cup of cooking liquid before draining.
-
While pasta cooks, thinly slice the fennel bulb and garlic. Prepare the fresh chile if using, crush the fennel seeds, and mince the parsley.
-
Heat oil in a large pan over medium-high heat. Sauté garlic until golden, then add chile flakes or fresh chile.
-
Stir in the sliced fennel, crushed fennel seeds, and 1/2 teaspoon salt; cook for 2 minutes until fennel softens.
-
Add wine or broth, cover, reduce heat to medium-low, and cook for 5 minutes until fennel is tender.
-
Stir in minced parsley, then add the drained pasta and reserved cooking liquid, tossing to combine.
-
Increase heat and cook for 2 to 3 minutes until most liquid evaporates and flavors meld.
-
Serve topped with your preferred hard cheese.
