Preheat the oven to 325 F and grease two 8x4-inch loaf pans.

Whisk flour, baking powder, baking soda, salt, cinnamon, sugar, and vanilla pudding mix in a large bowl.

Mix vegetable oil, milk, eggs, and vanilla in a medium bowl.

Add starter and the wet ingredients to the dry ingredients; mix until just combined, then stir in nuts.

Pour batter into the prepared pans and bake for 1 hour.

Cool in pans for 5 minutes, then transfer bread to a wire rack to cool completely.
