Fava Bean Stew (Koukia Yahnista or Yahni)

Instructions

  1. To quickly soak fava beans, add them to a pot with water covering by 2 inches and 2 tablespoons salt; bring to a rolling boil, turn off heat, cover, and soak for 1 hour, then drain and rinse.

  2. Heat olive oil in a large pot over medium-high heat, then sauté onions for approximately 5 minutes until tender.

  3. Stir in tomatoes, parsley, cumin, and bay leaves; continue to sauté for an additional 5 to 10 minutes.

  4. Add water and bring to a boil; then add the soaked fava beans and reduce heat to a simmer.

  5. Simmer the stew, covered, for 45 minutes.

  6. Remove the cover, season with salt and pepper, and simmer for another 10 to 15 minutes until the beans are tender.

  7. Discard the bay leaves.

  8. Serve the stew with a drizzle of olive oil and a sprinkle of fresh parsley.
