Fattigman Cookies

Instructions

  1. Heat 2 inches of oil in a heavy pot to 375 F.

  2. Cream eggs, sugar, and optional brandy; stir in melted butter, then fold in whipped cream.

  3. Sift flour, cardamom, baking powder, and salt together, then lightly mix into the wet ingredients to form a soft dough.

  4. Chill dough, covered, for at least 30 minutes.

  5. Roll chilled dough on a floured board to 1/8 inch thickness.

  6. Cut dough into 1 1/4 x 3 1/2 inch diamond shapes.

  7. Make a 1/2-inch slash in the center of each diamond and twist one corner through the slash to form a knot.

  8. Fry pastry knots until golden brown, turning occasionally; remove and drain on paper towels.

  9. Sprinkle with vanilla or confectioners' sugar and serve.
