Fattigman Cookies
A classic fried sweet, Fattigman is a beloved Norwegian and Swedish pastry.

Instructions

Heat 2 inches of oil in a heavy pot to 375 F.

Cream eggs, sugar, and optional brandy; stir in melted butter, then fold in whipped cream.

Sift flour, cardamom, baking powder, and salt together, then lightly mix into the wet ingredients to form a soft dough.

Chill dough, covered, for at least 30 minutes.

Roll chilled dough on a floured board to 1/8 inch thickness.

Cut dough into 1 1/4 x 3 1/2 inch diamond shapes.

Make a 1/2-inch slash in the center of each diamond and twist one corner through the slash to form a knot.

Fry pastry knots until golden brown, turning occasionally; remove and drain on paper towels.

Sprinkle with vanilla or confectioners' sugar and serve.
