Instructions

  1. Preheat the oven to 475°F.

  2. Whisk eggs, milk, and salt in a large bowl, then let stand for 10 minutes.

  3. Sieve flour into the egg mixture; beat until smooth, then cover and let rest at room temperature for at least 30 minutes.

  4. Heat 1 tablespoon of fat in a frying pan and cook the sausages for 10 minutes until browned.

  5. Place the remaining fat into a 12 x 9 ½ inch deep roasting tin, then heat in the oven until smoking hot.

  6. Carefully arrange the browned sausages in the hot tin and return to the oven for 5 minutes.

  7. Slowly pour the batter over the hot sausages and fat, then bake for 20-30 minutes until golden and risen.

  8. Cut into squares and serve, ideally with hot onion gravy.
