A Persian granita-style frozen dessert features thin rice noodles in a rose water syrup, offering an ideal summer treat.

Instructions

Combine 3 cups water, sugar, and salt in a medium saucepan, bring to a simmer, and stir until the sugar dissolves.

Remove the syrup from heat, stir in lime juice and rosewater, then pour into a shallow freezer-safe dish and freeze uncovered for 30 minutes.

Cook rice noodles until al dente, then strain, rinse with cold water, and cut into 1-inch pieces.

Stir the cut noodles into the partially frozen syrup and return to the freezer, uncovered, for one hour.

Remove from the freezer and scrape the frozen mixture with a fork, incorporating the frozen edges into the slushy center. Freeze for another hour, then repeat this scraping and freezing process two more times until a granita texture is achieved.

Serve the granita with a lime wedge and optional toppings like pistachios and cherry syrup.
