Instructions

  1. Combine 3 cups water, sugar, and salt in a medium saucepan, bring to a simmer, and stir until the sugar dissolves.

  2. Remove the syrup from heat, stir in lime juice and rosewater, then pour into a shallow freezer-safe dish and freeze uncovered for 30 minutes.

  3. Cook rice noodles until al dente, then strain, rinse with cold water, and cut into 1-inch pieces.

  4. Stir the cut noodles into the partially frozen syrup and return to the freezer, uncovered, for one hour.

  5. Remove from the freezer and scrape the frozen mixture with a fork, incorporating the frozen edges into the slushy center. Freeze for another hour, then repeat this scraping and freezing process two more times until a granita texture is achieved.

  6. Serve the granita with a lime wedge and optional toppings like pistachios and cherry syrup.
