Falernum

Instructions

Combine 1/2 cup toasted sliced almonds, 40 whole cloves, 30 whole allspice berries, and 1 cup light rum in a lidded jar; shake and let infuse at room temperature for 24 hours, shaking twice daily.

After 24 hours, add 1/4 cup fresh lime zest and 1 1/2 tablespoons grated ginger to the rum mixture, then shake and infuse for another day.

Strain the infused rum through a cheesecloth, squeezing out all liquid, into a medium bowl.

Separately, start boiling 1 cup water with 2 cups granulated sugar in a medium saucepan until dissolved, about 5 minutes, then reduce to a simmer.

Add 1/2 cup fresh lime juice to the sugar syrup and simmer for 10-15 minutes until reduced to about 2 cups.

Remove the lime syrup from heat and cool completely to room temperature for about 1 hour.

Combine 1 cup of the cooled lime syrup with the infused rum mixture, stirring thoroughly.

Strain the finished falernum through a fine mesh strainer into a clean pint-size glass container and seal.
