Falafel-Spiced Middle Eastern Couscous (Israeli Couscous)

An Israeli couscous side dish combines chickpeas, tomatoes, and feta cheese, seasoned with falafel spices.

Instructions

  1. Preheat the oven to 400°F.

  2. Combine cumin, coriander, garlic powder, and black pepper.

  3. Toss cherry tomatoes with 1 tablespoon olive oil and half the spice mixture. Toss chickpeas with 1 tablespoon olive oil and the remaining spice mixture.

  4. Spread seasoned chickpeas and tomatoes on a parchment-lined sheet pan; roast for 30 minutes.

  5. Bring water to a boil, add couscous, and simmer for 10 minutes. Remove from heat, cover for 5-7 minutes, then fluff with a fork and lightly salt.

  6. Stir roasted chickpeas, tomatoes, and cilantro or parsley into the couscous. Sprinkle with feta cheese.

  7. Serve warm or at room temperature.
