Instructions

  1. Preheat the oven to 450 F.

  2. In a medium bowl, whisk chickpea flour, salt, 3 tablespoons olive oil, optional Parmesan, and ground black pepper; add 1 3/4 cups water and whisk until blended.

  3. Let the batter rest at room temperature for 30 minutes.

  4. Place the remaining 1/4 cup olive oil in a 12-inch pizza pan and heat in the preheated oven until very hot.

  5. Gradually stir the remaining water into the rested batter until it reaches a pourable consistency.

  6. Carefully remove the hot pan, immediately pour the batter to form a 1/4-inch layer, then return to the oven.

  7. Bake for 8 to 10 minutes, or until the fainá is golden and crispy.

  8. Remove the pan from the oven, cut the flatbread into pieces, and serve hot.
