Fadge - Irish Potato Bread

Potato cakes, or 'fadge', are simple and quick potato pancakes that can serve as an emergency bread.

Instructions

  1. Preheat the oven to 400 F (205 C).

  2. In a large bowl, combine mashed potato with all other ingredients and mix thoroughly to form a light, sticky dough.

  3. Heavily flour a work surface.

  4. Roll the dough to approximately ½ inch (1 cm) thickness.

  5. Cut the dough into saucer-sized rounds and score each with a cross, or cut individual cakes using a round cutter.

  6. Grease a baking sheet with butter, then carefully transfer the dough rounds onto it.

  7. Bake in the center of the oven for 15 minutes, or until golden brown and risen.

  8. Transfer to a cooling rack and let cool slightly before serving warm.
