Extra Special Three-Cheese Macaroni and Cheese

Instructions

  1. Preheat the oven to 350°F and grease a 2-quart baking dish.

  2. Cook macaroni in salted boiling water as directed on the package; drain and rinse.

  3. In a large saucepan, melt 2 tablespoons butter over medium-low heat, then stir in flour for 2 minutes.

  4. Gradually add milk, stirring constantly, and cook until the mixture thickens.

  5. Stir in the herbs, salt, pepper, goat cheese, cheddar, and 3 ounces of Parmesan, cooking until the cheeses melt.

  6. Combine the drained macaroni with the cheese sauce and spoon it into the prepared baking dish.

  7. Melt the remaining 2 tablespoons butter, then toss with breadcrumbs and the reserved Parmesan.

  8. Sprinkle this mixture over the casserole.

  9. Bake for 25 to 30 minutes, until browned and bubbling.
