Exploding Truffles

These chocolate truffles incorporate Pop Rocks for a unique, 'exploding' texture and flavor that literally pops in your mouth.

Instructions

  1. Chop chocolate into small pieces and place in a heat-safe bowl; simultaneously, simmer cream in a small saucepan.

  2. Pour hot cream over the chopped chocolate to melt, then whisk until a smooth ganache is formed.

  3. Press plastic wrap onto the surface of the ganache and refrigerate for approximately 3 hours until firm enough to scoop.

  4. Scoop and roll the firm ganache into 3/4-inch diameter balls between your palms, using cocoa powder if needed to prevent sticking.

  5. Open 4 Pop Rocks envelopes and place in a small bowl. Roll each truffle ball in the Pop Rocks, then briefly roll again to embed the candy.

  6. Set the coated truffles on a baking sheet lined with aluminum foil.

  7. While truffles chill, melt coating chocolate in a microwave-safe bowl, stirring every 30 seconds to prevent overheating.

  8. Dip firm truffles into the melted coating chocolate using a fork, tap off excess, and return to the foil-lined sheet. Immediately sprinkle with the remaining popping candy.

  9. Refrigerate for 10 to 15 minutes to allow the chocolate coating to set.
