Ensalada de Pepino (Spanish Cucumber Salad) Recipe

Instructions

  1. Peel and slice cucumbers into 1/8-inch rounds.

  2. Cut each tomato into 8 pieces.

  3. Thinly slice the red onion into rings, then halve the rings.

  4. Combine all vegetables in a serving bowl. Sprinkle with 1/2 teaspoon salt.

  5. Pour 2 tablespoons vinegar and 6 tablespoons olive oil over the vegetables. Toss, then taste and adjust seasoning as desired.
