Ensalada de Pepino (Spanish Cucumber Salad) Recipe
A light and refreshing Spanish cucumber and tomato salad, known as ensalada de pepino, can be prepared in minutes.

Peel and slice cucumbers into 1/8-inch rounds.

Cut each tomato into 8 pieces.

Thinly slice the red onion into rings, then halve the rings.

Combine all vegetables in a serving bowl. Sprinkle with 1/2 teaspoon salt.

Pour 2 tablespoons vinegar and 6 tablespoons olive oil over the vegetables. Toss, then taste and adjust seasoning as desired.
