Preheat oven to 400°F (use if needed later).

Combine milk, butter, salt, sugar, yeast, and egg in a stand mixer. Gradually add flour while mixing on medium speed for 5 minutes until the dough pulls away from the bowl.

Cover dough and let rise in a warm spot for 1-2 hours.

Divide dough into 16 pieces, roll into balls, flatten, and dip in semolina or farina. Place on a cool griddle (or parchment-lined sheet for excess). Cover and let rise for 20 minutes.

Cook muffins on a very low-heat griddle for 7-12 minutes per side until lightly browned. If browned but not done, transfer to the 400°F oven for 10 minutes. Cook remaining muffins.

Cool slightly, then split with a fork.
