English Apricot Liqueur

An easy-to-make apricot liqueur, crafted with fresh English apricots in summer, matures to perfection by Christmas.

Instructions

  1. Combine ground cloves, allspice, nutmeg, and ginger to create the spice mix.

  2. Place apricots in a jam pan, add 2 tablespoons of the spice mix, sugar, and wine; stir well.

  3. Bring the mixture to a boil, stirring frequently until sugar dissolves.

  4. Remove from heat and stir in the gin.

  5. Extract and skin an apricot kernel, then add it to the apricot mixture.

  6. Cover the pan and set aside for five days.

  7. Sterilize and dry 2 to 3 wine or screw-cap bottles.

  8. Strain the apricot mixture through a fine sieve or muslin into a large bowl, pressing to extract as much liquid as possible.

  9. Pour the liquid into the prepared bottles, seal, and label.

  10. Allow to age for a minimum of one month before opening.
