Instructions

  1. Wash and chop the ginger.

  2. Juice lemons to yield 2/3 cup, straining out seeds and pulp.

  3. Combine chopped ginger, lemon juice, water, and optional honey in a blender.

  4. Blend on high for about 2 minutes until smooth, scraping the sides as needed.

  5. Pour mixture into a cheesecloth-lined strainer over a bowl; allow it to drain.

  6. Squeeze the cloth firmly to extract all liquid, then discard the pulp.

  7. Transfer the extracted liquid into a bottle and chill.
