Combine chopped ginger, lemon juice, water, and optional honey in a blender.

Blend on high for about 2 minutes until smooth, scraping the sides as needed.

Pour mixture into a cheesecloth-lined strainer over a bowl; allow it to drain.

Squeeze the cloth firmly to extract all liquid, then discard the pulp.
