Empanadas de Pizza

Preheat oven to 400 F.

Prepare empanada dough, then cover and rest for 10 minutes.

Combine grated mozzarella, cheddar, half the Parmesan, and 1/2 cup marinara sauce.

Divide dough into 20 pieces (50 grams each); roll each into a 4-5 inch circle on a floured surface. Place 1 tablespoon filling and one pepperoni on each circle, then fold into a half-moon, sealing edges. Arrange on a cookie sheet.

Whisk egg yolk with 1 tablespoon water. Brush empanadas with the egg mixture and sprinkle with remaining Parmesan.

Bake for 20-25 minutes until puffed and golden brown. Serve warm with marinara sauce.
