Instructions

  1. In a large pot, combine chicken broth, carrots, celery, onion, potato, bell pepper, tomato paste, garlic, bay leaf, and oregano; season with salt and white pepper. Bring to a boil, then simmer for 25 minutes.

  2. Add shredded chicken, tomatoes, and zucchini. Bring to a boil, then simmer for 10 minutes and remove from heat.

  3. Cut tortillas into matchstick strips.

  4. Sauté strips in hot oil until crisp, then drain on paper towels.

  5. To serve, place tortilla strips in bowls, top with Monterey Jack cheese, ladle in soup, and garnish with avocado and cilantro.
