Eggplant Fritters

Instructions

  1. Start boiling salted water, then peel, slice, and cook eggplant until tender.

  2. Meanwhile, heat 3 inches of vegetable oil to 370°F in a heavy saucepan or skillet.

  3. Drain cooked eggplant thoroughly and mash.

  4. In a bowl, beat an egg. Add 1 cup mashed eggplant, flour, baking powder, salt, pepper, and butter, then mix until well blended.

  5. Drop spoonfuls of batter into the hot oil and fry until golden brown.

  6. Remove fritters with a slotted spoon and drain on paper towels.
