Eggnog Truffles

Instructions

  1. Simmer eggnog in a small saucepan.

  2. In a medium bowl, combine white chocolate, salt, and butter; pour the hot eggnog over this mixture, let it sit for one minute, then whisk until smooth.

  3. If any chocolate remains undissolved, microwave the mixture in 6-second intervals, whisking after each, until smooth.

  4. Stir in 1/4 teaspoon nutmeg, adding an additional 1/4 teaspoon after tasting if desired.

  5. Press cling wrap directly onto the ganache surface and refrigerate for at least 2 hours or until firm enough to scoop.

  6. Scoop the firm mixture into 1-inch balls, rolling them smooth and dusting hands with confectioners' sugar if sticky, then place on a foil-covered baking sheet.

  7. Melt white chocolate candy coating until fluid.

  8. Dip each truffle into the melted coating, allowing excess to drip, then return to the baking sheet; optionally, sprinkle with nutmeg before the coating sets.

  9. Allow the coating to set completely.
