Eggnog Cookies

Instructions

  1. Preheat the oven to 350 F and line 4 baking sheets with parchment paper.

  2. Whisk together flour, baking soda, baking powder, salt, nutmeg, and cinnamon in a medium bowl.

  3. Cream room temperature butter and granulated sugar in a stand mixer until light and fluffy (2-3 minutes), scraping the bowl sides.

  4. Add egg yolks and mix until combined.

  5. Stir in dark rum (if using) and vanilla extract for 20 seconds.

  6. Gradually drizzle in eggnog; mix for 2 minutes until smooth and fluffy.

  7. Gradually add dry ingredients to the wet mixture on low speed until just combined.

  8. Drop 1 tablespoon dough portions onto prepared baking sheets, spacing 3 inches apart (max 6 per sheet).

  9. Bake for 9-12 minutes, rotating sheets halfway, until edges are golden and centers are set. Cool completely on wire racks.

  10. For the icing, whisk together confectioners' sugar, remaining eggnog, and remaining dark rum (if using).

  11. Once cookies are cooled, drizzle with icing and garnish with fresh nutmeg.
