Eggnog Cheesecake

Instructions

  1. Preheat oven to 325 F.

  2. Prepare a 9-inch springform pan by buttering, then lining the bottom and sides with parchment paper.

  3. Combine cracker crumbs with melted butter, then press this mixture firmly into the pan's base to form the crust.

  4. Beat cream cheese with sugar, then add flour and beat again. Slowly mix in eggs to avoid excessive air.

  5. Stir in eggnog and spices, then pour the mixture into the prepared crust and tap the pan to release air bubbles.

  6. Place the cake pan into a larger baking pan containing 1 1/2 inches of hot water, then bake in the preheated oven for 50 minutes, or until firm with a slight wobble.

  7. Cool on a rack for 20 minutes, then refrigerate for 2-3 hours, or preferably overnight.

  8. Before serving, remove from the refrigerator 30 minutes in advance to reach room temperature, then grate nutmeg over the top.
