Egg White Frittata Recipe

Instructions

  1. Preheat the oven to 375 F.

  2. In a medium bowl, whisk egg whites with half of the Parmesan cheese, Italian seasoning, salt, and pepper until blended.

  3. Melt butter in a 10-inch oven-safe nonstick skillet over medium heat. Sauté the white and light green sliced green onions and bell pepper for 2 to 3 minutes until softened.

  4. Add spinach and cook for 1 to 2 minutes until wilted.

  5. Pour the egg mixture into the skillet and cook for 1 to 2 minutes until the edges begin to set.

  6. Arrange sliced grape tomatoes on top, then sprinkle with the dark green sliced green onions and the remaining Parmesan.

  7. Transfer skillet to the oven and bake for 10 to 12 minutes until set. For a browned top, broil on high for 1 minute.

  8. Serve the frittata with desired sauce or garnish.
