Instructions

  1. Preheat the oven to 350 F and line a muffin pan with foil liners, then lightly spray them.

  2. Whisk together egg whites and sour cream in a medium bowl.

  3. Stir in spinach, roasted red peppers, green onions, salt, pepper, and Italian seasoning.

  4. Fill each muffin well three-quarters full, then top with Parmesan.

  5. Bake for about 20 minutes until the bites are puffed and a toothpick inserted comes out clean.

  6. Allow to cool for several minutes before serving.
