Heat a large sauté pan over medium-high heat. Add ground pork, sesame oil, and scallion whites; cook for 5 minutes, breaking up pork until browned.

Stir in 3/4 of the scallion greens, coleslaw mix, garlic, soy sauce, rice vinegar, ground ginger, and optional red pepper flakes; cook for 3 to 5 minutes until cabbage is tender.
