Instructions

  1. Preheat oven to 375 F and grease a baking pan's cups with shortening or cooking spray.

  2. Cream sugars, salt, and butter with an electric mixer, then blend in eggs and vanilla.

  3. Combine flour and baking soda in a separate bowl, then add to the wet mixture and mix thoroughly.

  4. Stir in all but 1 cup of mini chocolate chips.

  5. Flour your hands lightly, roll dough into balls, and press into the greased pan cups to form even-sided cups.

  6. Bake for 8 minutes.

  7. Remove the pan from the oven; use a muddler or small spoon to deflate and shape the semi-baked dough inside each cup.

  8. Return to oven for 2 minutes, then remove and deflate again; repeat this 2-minute cycle 1-2 more times (total 12-14 minutes baking) until edges are golden brown.

  9. Remove from oven, deflate once more, and allow cups to cool completely in the pan.

  10. Once cool, invert the pan to release the cookie cups.
