Ecuadorian Fried Cheese Empanadas

Whisk flour, salt, and baking powder in a large bowl. Cut in cold butter until the mixture is crumbly.

Gradually add milk or water, mixing until a smooth dough forms. Wrap the dough and let it rest for 30 minutes.

Melt butter in a small skillet and cook minced onion over medium-low heat until translucent. Let cool.

Combine the cooled onion with shredded cheese in a bowl.

Divide the dough into 16 equal balls. Roll each ball into a thin, 6-inch diameter circle.

Brush the edges of each dough circle lightly with water. Place 1 1/2 tablespoons of the cheese filling in the middle.

Fold each dough circle in half, sealing the edges firmly. Create a decorative seam.

Heat several inches of vegetable oil in a deep skillet over medium-high heat until hot enough to sizzle a small piece of dough.

Fry the empanadas in batches, flipping once, until golden brown.

Remove cooked empanadas to paper towels and immediately sprinkle with sugar. Cool for 5 minutes before serving.
