Easy Vegetarian Meatloaf Loaf

Instructions

  1. Preheat the oven to 375°F and lightly grease a loaf pan.

  2. Sauté garlic, onion, and bell peppers in olive oil until the onions are soft.

  3. In a large bowl, combine the sautéed vegetables, ground meat substitute, oatmeal, breadcrumbs, 3 tablespoons ketchup, garlic salt, and pepper; mix thoroughly.

  4. Press the mixture into the prepared loaf pan.

  5. Cover with foil and bake for 30 minutes.

  6. While the loaf bakes, whisk together ketchup, brown sugar, dry mustard, and optional nutmeg for the topping.

  7. Remove the foil, spread the topping over the loaf, and bake uncovered for an additional 15 minutes, or until done.

  8. Let the loaf cool uncovered before slicing and serving.
