Instructions

  1. Preheat the oven to 425 F.

  2. In a large bowl, combine flour, sugar, baking powder, baking soda, and ginger. Cut in vegan margarine until mixed.

  3. Add pumpkin and mix thoroughly.

  4. On a floured surface, knead the dough a few times, then form into a large circle a few inches thick.

  5. Cut the circle into 12 triangular pieces.

  6. Transfer pieces to a parchment-lined baking sheet.

  7. Bake for 12 to 15 minutes, until done.

  8. Serve warm with vegan butter and jam, or cool and serve with coffee.
