Easy Vegan Papaya Salad

Instructions

  1. Combine papaya, green beans, carrots, cabbage, soy sauce, tomatoes, garlic, chile peppers, lemon, sugar, and salt; toss thoroughly.

  2. Mash the mixture with a mortar and pestle, if desired.

  3. Chill for a minimum of 2 hours.

  4. Stir in peanuts and serve cold, optionally over shredded lettuce.
