Easy Vegan Bruschetta

Instructions

  1. Chop tomatoes, optionally removing excess seeds and pulp, and chop fresh basil.

  2. Combine chopped tomatoes, oil, basil, and salt in a covered bowl; marinate for at least 4 hours at room temperature to preserve tomato flavor.

  3. Just before serving, lightly toast bread slices.

  4. Spoon the tomato basil mixture onto the toasted bread using a slotted spoon.

  5. Top with fresh cracked pepper and serve promptly.
