Easy Vegan and Gluten-Free Lentil Loaf

Preheat oven to 350°F.

Rinse lentils, then cook them in vegetable broth or water until soft, about 30 minutes; drain well and mash while hot.

Sauté diced onions and minced garlic in olive oil until soft.

Combine the mashed lentils, sautéed onion mixture, cooked rice, salt, 1/4 cup ketchup or barbecue sauce, sage, and Italian seasoning; mix thoroughly.

Press the lentil mixture into a greased loaf pan, then spread 1-2 tablespoons of ketchup over the top.

Bake for 1 hour, basting with additional ketchup every 15 minutes.

Cool the loaf for 15 minutes before slicing and serving.
