Easy Vegan and Gluten-Free Lentil Loaf

Instructions

  1. Preheat oven to 350°F.

  2. Rinse lentils, then cook them in vegetable broth or water until soft, about 30 minutes; drain well and mash while hot.

  3. Sauté diced onions and minced garlic in olive oil until soft.

  4. Combine the mashed lentils, sautéed onion mixture, cooked rice, salt, 1/4 cup ketchup or barbecue sauce, sage, and Italian seasoning; mix thoroughly.

  5. Press the lentil mixture into a greased loaf pan, then spread 1-2 tablespoons of ketchup over the top.

  6. Bake for 1 hour, basting with additional ketchup every 15 minutes.

  7. Cool the loaf for 15 minutes before slicing and serving.
