Instructions

  1. In a stockpot, combine 2 gallons cold water, 2 cups salt, 1 cup sugar, 3 crushed garlic cloves, 6-8 sprigs each of fresh thyme, sage, and rosemary, 1 1/2 teaspoons cracked allspice berries, and 1 teaspoon black pepper.

  2. Simmer over medium heat, stirring until salt and sugar dissolve, then cool completely.

  3. Submerge the turkey in the cooled brine, ensuring it stays fully immersed by weighing it down with a plate and cans.

  4. Refrigerate for 12-24 hours.

  5. Before roasting, remove turkey, rinse thoroughly under cold water, pat dry, and discard the brine.

  6. Roast turkey using your preferred method, omitting additional salt.
