Instructions

  1. Combine lard and butter in a bowl.

  2. Rub fats into flour and salt until resembling breadcrumbs.

  3. Stir in sugar, currants, mixed spice, and honey.

  4. Add the beaten egg and mix into a firm dough.

  5. Roll the dough to 2cm thick on a floured surface.

  6. Cut into 6cm diameter discs and griddle over medium heat until golden brown on both sides.

  7. Dust with caster sugar; serve immediately or store in an airtight container.
