Easy Traditional Risotto

Instructions

  1. Start simmering chicken broth in a saucepan over low heat.

  2. In a separate saucepan, heat olive oil over medium heat. Sauté onion and garlic until translucent, about 4-5 minutes, ensuring they do not brown.

  3. Stir in the rice and cook for 3-4 minutes, stirring constantly, until some grains become translucent.

  4. Add wine or 1/2 cup chicken broth; cook and stir until absorbed.

  5. Add 1/2 cup simmering chicken broth to the rice, stirring constantly until absorbed.

  6. Continue adding broth, about 1 cup at a time, stirring until absorbed, until the rice is tender yet firm, which takes about 20-25 minutes.

  7. Remove from heat, then stir in cheese, butter, salt, and pepper until melted before serving.
