Easy Traditional Irish Champ

Instructions

  1. Start boiling a large pot of salted water.

  2. Peel and quarter 5 small (approximately 675 grams) russet potatoes, then simmer them in the boiling water for about 20 minutes until tender.

  3. Finely chop the white parts of 2 medium green onions and thinly slice the green parts, keeping them separate.

  4. Drain the cooked potatoes. In the same pot, melt 1/4 cup (55 grams) salted butter with 2 to 3 ounces (50 to 75 milliliters) milk over low heat.

  5. Return the potatoes to the pot and mash until smooth and creamy.

  6. Stir in the chopped white parts of the green onions, then season with salt and pepper to taste.

  7. Serve immediately, garnished with the reserved sliced green onions.
