Easy Traditional British Rice Pudding

Instructions

  1. Preheat the oven to 300 F (150 C).

  2. Lightly butter a 1.25-liter ovenproof pudding dish or 8x8-inch baking dish.

  3. In a saucepan, combine milk and cream. Scrape vanilla seeds into the pan, add the pod, and gently heat without boiling.

  4. Remove from heat, infuse for 5 minutes, then remove the vanilla pod.

  5. Spread rice and sugar in the buttered dish. Pour the warmed milk over, add lemon strips, and stir well.

  6. Generously grate nutmeg over the top.

  7. Place the dish on a baking sheet in the preheated oven. Bake for 2 to 2 1/2 hours until creamy, thick, and a nutmeg skin forms.

  8. Cool and let the pudding set for 15 minutes. Serve plain or with stewed fruit or jam.
