Easy Traditional British Mushy Peas

A traditional and inexpensive side, these mushy peas are a classic accompaniment for fish and chips.

Instructions

  1. Start boiling 2 cups of water.

  2. Place peas in a large bowl, add baking soda, and cover with the boiling water. Stir until dissolved, then soak for at least 12 hours.

  3. Drain and rinse the peas, then transfer them to a large pot. Cover with about 2 cups of cold water and bring to a boil.

  4. Reduce heat and simmer uncovered for approximately 30 minutes, or until the peas soften and become mushy.

  5. Season with salt and pepper. Optionally add sugar for sweetness, cream or milk for fluffiness, or butter for flavor. Mash with a fork or process for a smoother consistency.

  6. Serve hot.
