Instructions

  1. In a large saucepan, combine crushed tomatoes, water or stock, celery, parsley, bay leaf, salt, and pepper; bring to a boil over medium-high heat.

  2. Reduce heat to low and simmer for 15 minutes. For a smoother soup, process it in batches in a blender.

  3. Stir in cooked rice and cook for about 5 minutes over medium-low heat, until hot and bubbling.

  4. Remove the bay leaf before serving.
