Easy Thai Chicken Satay

Instructions

  1. Process all marinade ingredients; pour over chicken, stir, and refrigerate 30 minutes to 8 hours.

  2. Soak 12 to 15 wooden satay sticks in water while chicken marinates.

  3. Skewer marinated chicken onto soaked sticks, reserving any excess marinade.

  4. To cook in oven: Preheat broiler. Arrange skewers on a lined baking sheet on the second-to-highest rack. Broil 5 minutes, turn, and baste with reserved marinade. Continue turning and basting every 4-5 minutes until browned, charred, and cooked through.

  5. To grill: Heat grill to high. Place skewers on grill, baste with reserved marinade after turning, and cook for about 15 minutes until browned, charred, and opaque.

  6. Serve satay with peanut sauce and Thai jasmine rice.
