Easy Tamale Pie Recipe
A simple American tamale pie casserole features a speedy preparation with the help of corn muffin mix.

Instructions

Preheat oven to 350 F.

In a large pan over medium heat, brown beef and peppers, breaking up the meat.

Add salsa, salt, chipotle, and oregano; simmer for 15 minutes, stirring occasionally.

Remove from heat, skim fat, and set aside.

Lightly grease a 9x13-inch casserole dish.

Prepare one corn muffin mix with an egg and 1/3 cup milk; spread evenly in the dish bottom.

Layer with corn and half the cheese.

Spoon beef mixture evenly over layers and press lightly.

Prepare the second corn muffin mix with the remaining egg and milk; fold in the remaining cheese.

Spread evenly over the top, leaving a 1/2-inch space around edges.

Place the casserole dish on a baking sheet and bake for 1 hour.

Allow to rest for 15 minutes.
