Easy Strawberry Cake With Cream Cheese Frosting

Instructions

  1. Preheat oven to 350°F. Grease and flour 2 (8- or 9-inch) round cake pans, or prepare 2 (12-cup) muffin pans with liners.

  2. Combine cake mix and strawberry gelatin powder in a large bowl.

  3. Beat in vegetable oil, eggs, water, and 3/4 cup mashed strawberries.

  4. Divide batter evenly into the prepared pans.

  5. Bake cake for 30 minutes, or cupcakes for 18-20 minutes, until a toothpick inserted in the center comes out clean.

  6. Cool cakes in pans for 10 minutes, then transfer to racks to cool completely.

  7. For the frosting, beat butter and cream cheese until smooth.

  8. Add 4 tablespoons mashed or pureed strawberries and 5 cups confectioners' sugar; beat until smooth and creamy. Add more sugar if needed for thickness.

  9. Frost cooled cake layers and sides, or frost cupcakes.
