Easy Stovetop Pot Roast With Vegetables

Instructions

  1. Heat oil in a large pot over medium-high heat.

  2. Brown the roast on all sides, then remove from the pot.

  3. Discard the oil. In the same pot, combine mushroom soup, onion soup mix, and 1 cup water; bring to a boil.

  4. Return the roast to the pot, reduce heat to low, cover, and simmer for 2 hours, turning the roast occasionally.

  5. Add potatoes and carrots; cover and cook for another 40 minutes, or until vegetables are tender, adding water if necessary.

  6. Remove meat and vegetables to a serving platter and keep warm.

  7. In a small bowl, mix flour and water. Gradually stir this mixture into the pan liquid, stirring until the sauce boils and thickens.

  8. Spoon the thickened sauce over the pot roast and vegetables.
